What exactly is the cook-chill and cook-freeze technologies?

Once our meals are fully prepared and cooked they are immediately transferred to a blast-freezer which then rapidly freezes the food items down to -18 degrees Celsius. The food is then packed into portions, and temperature is kept consistent at -18 degrees Celsius.
